2004 Cabernet Sauvignon / Shiraz ‘Vinum Vetus’
Grapes are from our Adelaide Plains property in South Australia. Cool climate, low yielding vines. Crusher destemmer, pump-overs and punchdowns performed 3-4 times daily over 8 days during maceration-fermentation period in its own wild yeast. Basket pressed, then blended and matured in a process of stainless steel and French Oak Hogshead barrels. No fining agents added. Pad filtration before bottling on 23/11/2018.
